We had the joy of having some close friends over for dinner who were visiting from our past life in Houston.  We enjoyed the following to the fullest!

Course 1

Blue Point & Kumamoto oysters with a bottle of 08 Veris Sauvignon Blanc

Course 2

Pan Seared Salmon with drunken chefs mix of mushrooms with a bottle of 05 Failla Sonoma Coast Pinot Noir

Course 3

Petit Filet Mignon with a blue cheese potato gratin and purple asparagus with a bottle of 99 Insignia

Dessert

Reduced aged balsalmic vinegar over sliced fresh strawberries and strauss family creamery vanilla ice cream with a 99 Chateau St. Michelle Late Harvest Riesling

MMMM MMMMMM MMMMMM

Was this catered? I'd be open to any tips on serving oysters at home. I've always found shucking a chore...how long do they last on ice?

They are a pain to shuck. I like to put them on the grill until they just pop open and top them with creme fraiche and minced chives.   Only takes minutes.
In theory, there is no difference between theory and practice. In practice, there is...

.ps - friends don't let friends eat farmed salmon.

Drew, you crack me up. I had the pleasure of sitting in front of you and behind kpak on the bus at some anniversary event, and I just knew the "foodie" contingent was in the house. Rock on!

Kpak, you may have solved my problem...

Hi Saut,

No we came up with the menu very last minute actually.  The oysters were a pain to shuck (especially since we figured out we didn't have a shucker; screwdriver...check) but worth the wait.
