Ok folks, been a while since I hosted a dinner. Here's the catch: because of space limitations and the desire to not compromise on food service, I'll have to limit it to 12 persons total.

August 6, Saturday, my house. First course 6:00pm.

Corkage + Mrs Corkage (we get a spot because we're hosting)
JohnnyB and GF (Johnny gets a spot because he's cooking)
Marty and Lauri (Marty gets a spot because we're toasting to the new baby)
= 6 total so far

I'm planning six or so courses. If you have food issues, this may not be your night because the only person I make substitutions for is Travelrep Otherwise the menu should be good or your money back

So the first 6 persons from the DC Cru or VC masses who wish to attend and can make a commitment, please let me know by posting here. For those who can't attend, I'll plan a dinner in the fall so don't fret.

Ya know I'd actually be in for this but I've already got plans at the Clos Pepe BBQ. I'm sure this will be fantastic and I don't envy any of you have to force down the plonk which will be served

Alas, no substitutions will be necessary as Mrs. T and I will be in sunny, hopefully not hurricaney Antigua on vacation from August 4th....harumphhhhhh!

Sorry to miss the dinner but we'll have to hook up some other time unless you'd like to change the date for me......(not holding my breath...).

Julie and i have a friends annual party in arlington that we are going to. Dj, magician, balloon artist etc....

hate to miss a legendary Corkage dinner. have to catch the one in the fall.

Sorry to see so many regulars out, but glad to see TJ and Mrs TJ in. Anyone heard from Ray or Capitol Cat lately?

Board-O, you'll have to make the trip sometime (or let me know when you'll ber in the neighborhood again). We can do duck 5 ways or something like that Duck breast, duck legs, duck liver, duck lips...

Got the official for sure verification that we are for sure definitely in. We'll have to shop the rest of the weekend for things like towel bars, toilets, flooring, tile and all that stuff for our home remodel, but we'll obviously be making the time for this. Looking forward to it.

Any theme here on the food or wine front? Is it still the corn idea? Tomato?

Cool, looks like we're at 9 total so far (Johnny's girl will be outta town, drinking real wine)

As for a menu theme, well after Johnny and Nicole beat up on my first draft, and me fighting to keep certain things, we ended up with a themeless menu. A little bit of southern, a little asian, and fresh seasonal ingredients.

Looks like wild boar will be our meat dish, that will be a first for the dinners. Looks something like this:

AMUSE BOUCHE

"SOUTH" EAST ASIAN OYSTER "ROCKEFELLER"
Broiled with Spicy Chive Aïoli, Furikake Spice

FIRST COURSE

CORN CHOWDER AND JALAPEÑO CORN BREAD
Roasted Summer White Corn, Virginia Bacon, Garlic Chive Puree


SECOND COURSE

SEARED CHESAPEAKE BAY ROCKFISH [or whatever is fresh that day]
Rice Noodles, Thai Basil Sauce, Pear & Green Mango Salsa


THIRD COURSE

SMOKED DUCK TAMALE
Wrapped in a Bananna leaf, Black Mole, New Mexico Chili Red Sauce, Cilantro Crème Fraiche


FOURTH COURSE

WILD BOAR TENDERLOIN
Apple-Maple-Chili Glaze, Black Eye Peas, Tasso Ham


FIFTH COURSE

RASPBERRY CROSTATA
Grand Marnier Berry Sauce, Hagen Daz Crème Brulee Ice Cream
