First Course
Grilled Florida Gulf Prawns, Sun dried Tomato Risotto, Ginger Lemon-Grass Oil
Newton Unfiltered Chardonnay 2000- 92 Points from the Wine Spectator
The Newton Unfiltered Chardonnay is bursting with layers of fruit. Beginning with oranges, the wine develops characters of peaches and passion fruit and delicately balanced vanilla oak.

Second Course
Roasted Hudson Valley Quail with a Pineapple Mango-Chutney and Port Wine Sauce.
Pinot Noir Byron 2000
This Pinot Noir from Santa Maria Valley is complex and expressive with rich aromas of dark cherry. Blackberry and hints of toasted French oak. The texture is opulent with silky tannins and balanced acidity.

Third Course
Marinated and Seared Loin of Lamb with Sauce Merlot, Fava Bean Puree and Roasted Tourne Catskill Potatoes.
Pirramimma Shiraz 2000- 92 Points from the Wine Spectator
This Shiraz is extremely dense, almost black in color. The nose shows complex spicy Pepper fruit integrated with sweet American vanilla oak. The palate is richly flavored With spicy fruit, and a long, lingering tannin finish.

Fourth Course
Chocolate Sorbet with a Warm Pistachio Cake, Fresh Cherry Sauce and Whipped Crème Fraiche
Beringer Cabernet Port 1997
This port is made from cabernet sauvignon grapes, and is semi-sweet, smooth finish, and complements desserts well.
