| | I would just keep the whites on bottom. If you want them colder, put them in the fridge for an hour or so prior to drinking. | | | |

| For every additional 10 F, the rate at which the wine matures will double. Also, at higher temps wines seem to age in an uneven fashion.
52 F is an accidental standard stemming from underground cellars in France, but its merit is clinically proved. As david says, the most important thing is to avoid swings in temperature.

| I am currently keeping my wines in some cases boxes in my basement. Average temp in there year-round is betwen 63 and 66. The wines are in the dark, and kept at a pretty constant temperature. Assuming I can keep the light off of the bottles, once I get some racks put in I'm assuming that this will be a decent temp to store my average wines at, and then get a wine storage unit to handle the upper-end/long-term aging stuff.
Does this seem reasonable, or should I look at getting a proper cellar/storage unit to handle all of my bottles?

| Based on the results from some older guys in my tasting group, you should be fine.
Several of them have served me glorious bottles of Bordeaux from '60s & '70s stored long term between 55 and 68 degrees, so I doubt your narrow range will be a real problem.
I would keep any Champagne in cooler conditions. It's about the most fragile wine out there.

| Thanks for confirming what I was thinking. I'd like to build the walk-in cellar, but I don't think it's gonna happen. A small 250-bottle unit should be sufficient fo the small amount of high-end stuff I will try to keep for more than 5 years or so... or so I think today. | | | |

| Hmmm... maybe I can try the line on the SWMBO that she always uses on me when she comes home with a $$$ Food Processor or the like... "Honey, this isn't for me, it's for US".

| LOL budman!
Trab, 250 will probably not be enough. Make that definitely. But, I am living with only about 80 bottles of proper capacity, which suits me at the moment. I want a 250 bottle unit, but it will have to wait. I really want a 1000 bottle unit, but I doubt I'll ever get that.... | | www.roguefood.com -- www.cellartracker.com

| | True enough... probably better to suffer in the short run and get a properly-sized unit... | | | |
