amyh... I think most folks here keep their cellars at 54-57 degrees.
I'm sure that (when they wake up), some forumites will add more to this.

My cellar is usually around 56 degrees.

Planning on drinking any of them in this century? That's awfully cold & will likely slow things down to a glacial pace. Certainly you need never worry about heat damage, but those tannic cabernets will take an awfully long time to mature.

I'm in the 55-57 camp.

My cellar at the house is 56 degrees. My offsite storage is 55 degrees.

My tiny little unit is in the 55-degree to 58 degree zone.

With the stuff I picked up from my bro yesterday, I need another unit.

RF.. At that temperature, he's probably hoping to be cryogenically frozen long enough to appreciate the bordeaux he's going to buy over the years.

The key to storing wine properly is no temperature variation of more than 2 or 3*.

Wine will do just fine at 65* if that temp is constant. The current best-thinkers think 54 to 57 is the optimal storage temp.

The higher the temp the quicker a wine will age... and the quicker a wine will go OTH.

My wine unit is 53-58 degrees and like Thomas, I need another unit much to my wife's dismay.

Whites = 45 +/-
Red = 55-57 (52-53 if your under 30)
