Is there anything you can do with wine that's been held past its prime. If you've missed the drinking window, what can you do with it ?

Couldn't you almost always cook with it?

I might be wrong but when a wine is in its prime it is showing the best it will ever be...Just because it is past its prime stage doesnt mean that it wont be a good wine...

You can always sell it and make some money...

Are we talking just over the crest or DOA. A rule of thumb that I have heard is that a wine will remain in it's prime drinking window for as long as it took to get there. For instance a Bordeaux that hit stride at ten years will continue to drink well for the next 10. A Pinot that takes 5 years to peak will stay there for 5 more.

Selling is an option for old wine, there is always a buyer.
