I have opened a few bottles of a 2001 CA Cab that is very good after decanting for 2-3 hours. When I try the remaining half of the bottle the following day it often has a more expressive nose and more balanced fruit in the palate. Does this mean that the wine is too young and closed and that it will likely taste like the second day after a little bottle age?

Maybe - what was the serving temperature on the second day? that may account for the difference.

I would suggest that the extra airation time would've opened it up a bit. I've left some half full cabs open for a day and found them far better than decanting. temperature possibly has something to do with it, but I would suggest that simply the amount of exposure to air would've been the primary cause.

I put it in the refridgerator overnight but then took it out for a couple of hours prior to serving so I would say it was at 70 degrees, given this is room temp in this hot summer.

If the wines were served at about the same temperature then I'd GUESS that bottle age will help this develop into a wine that fits your palate. Without knowing the wine (who made it and who grew it) I'd say that the 01 Cabs from Napa will take a while to open up - most notes that I've seen seem to indicate they are sleeping.
