If you don't believe wines shut down, try a Beaucastel or Vieux Telegraphe from a great year 6-14 years after vintage date. Then try the smae wine on its 20th birthday. Where di all that fruit come from? It wasn't there 10 years earlier.

Board-O, no one claimed wines don't shut down. The question was : how, when, where, why, how long?

Wasn't there some people on the WS Forum that claimed that there was no such thing? Usually, it is someone who has only been drinking good big red wines for a few years.

The three enemies of wine are heat, light, and motion.

My 2 cents

That has always been my understanding too. But then I wonder why splash decanting wouldn't hurt a wine. Sure, it delivers a lot of air to the wine but it also moves the wine in a very non-delicate manner. Wouldn't this be considered motion?
