| | If you don't believe wines shut down, try a Beaucastel or Vieux Telegraphe from a great year 6-14 years after vintage date. Then try the smae wine on its 20th birthday. Where di all that fruit come from? It wasn't there 10 years earlier. | | | |

That has always been my understanding too. But then I wonder why splash decanting wouldn't hurt a wine. Sure, it delivers a lot of air to the wine but it also moves the wine in a very non-delicate manner. Wouldn't this be considered motion? | | | |
