World's Best Sommelier... Isn't that an event in the Olympics this week?

For Pete's sake, bottle-age is a REDUCTIVE process - not an OXIDATIVE process. How about developing a piece of metal that causes reductive reactions, not oxidative reactions, as they claim.

Then we could perhaps invent another piece of metal that causes polymerization of phenols too.

And some piece of metal that cause the reactions we still don't understand in ageing wines.
