Tasted at Ceiba 3/8

Decanted 30 minutes, tasted over 2 hrs

Color: Saturated inky black purple
Aroma: Black fruit perfume with whiff of alcohol. A bigger exorbitqant nose than I would have suspected at this age from a Chilean wine Cabernet blend.
Flavor: Black currant, blackberry, coffee, and toast dominate but this has significant alcohol that never dissipated and deterred from a higher rating even after 1 hour. Too young to enjoy maximally, but with ripe fruit and sufficient tannin, and low apparent acidity, this needs time, but is one of the densest finest, full bodied Cabs I have had from Chile in some time. This is not cheap but a bargain by EuroAmerican standards.

From the mountains of Rapel Valley just South of Santiago

I poured myself a small glass and put the rest in the decanter. The first taste had all sorts of red and black fruits jumping out of the glass. The tannins were pronounced and it was definitely tight, but oh the fruits!! Can’t wait to get back to this in a little bit.

Re-tasted at the 1 hour point. The fruits are still there; however the alcohol is starting to be become prominent. There are also hints of tar and leather to accompany the fruit. Will try again in a little bit. The alcohol has made the wine not nearly as enjoyable as it was upon opening.

2 hour – Tasted with fruits, cheeses, meats, and various other appetizers. Not much had changed since hour 1 except the alcohol had blown off, but only slightly

3 ½ hour – Where did the chocolate and tobacco come from? Also cherry is now the prominent fruit. Previously it was blackberry and raspberry. Lush mouthful and long lingering finish. Almost chalky, with the dry dusty tannins. The alcohol is still there a little bit on the finish.

5 hours – The bottle is really starting to sing now. Rich layers of spicy dark fruit and chocolate, with hints of tobacco and coffee. Lush, long finish, with no hints of alcohol. The finish still has a little bit of chalk or dustiness, but this allows the finish to linger on. WOW. Wish this would have been the first sip!! Can’t wait to try this again in 5 years.

Had an 01 Clos Apalta on Friday night.  Didn't take notes, but I thought that the wine was drinking quite nicely, and still has some legs to stand on for a few more years.

Had this wine earlier this month at Memphis offline. Had a terrific nose of tobacco and leather. Very Bordeaux like. The palate had the same but lacked the fruit to support the oak and tannins. It will be interesting to see if the fruit will live long enough to see the tannins resolve. I have my doubts on this particular bottle. Still a nice drink. I'll give it 91 pts.
