funny thing is, the info tag(for the la serena) stated "not for the faint of heart", and then my cheese lady went out of her way to explain how "aggresive" it is, and that not everyone "gets" it. now.....maybe i've gotten to a point where, i dunno, my chese palate is slightly more advanced than the average joe??? but i did not find it aggressive, nor would i categorize it as for the faint of heart. it did have a small amount of stink, but nothing that someone should be warned about. agree???
Yeah - that's strange. I really enjoyed it - don't recall anything "agressive" about it.
Now Epoisses, on the other hand...

Yeah I think your cheese lady was overstating a bit. If I can spoon the cheese then that's stinky cheese. | | "It's better to have your enemies inside the tent pissing out, then outside the tent pissing in." -- Lyndon Johnson

| | If I posted every time that I ate a few chunks of parmaggiano reggiano (and I'm not talking about that sawdust in the green can), I'd have a TJ-like post count. | | Visit The Butcher Block at http://www.butcherblocktampa.com/ | |

| | Gotta tell ya, we miss driving out to the Tillamook creamery :-( I'd pack the family up and we'd drive out at least once a month to buy cheese and ice cream. | | | |

| Montbriac Neal's Yard Dairy Stilton (I think) Fiscalini Farmstead Cheddar (from CA) La Vache de Chalais - gooey cheese wrapped in some kind of leaves...really nice.
Our local grocery was started by a couple who used to work at Dean and Deluca, so we have all organic produce, a great deli, and incredible cheese. Not bad for a quiet nook in SF...

| | When you grate cheese, do you move the cheese or the grater? | | Visit The Butcher Block at http://www.butcherblocktampa.com/ | |

| | Depends on what grater i am using. If the box, then I move the cheese. If the small hand held grater and the hunk of cheese is large enough, I move the grater. | | | |
