Perhaps a Merlot, and aged Cab, or a new style, fruit bomb Zin. Something smooth and relatively mellow as a counterpoint to the gaminess.

Personally I would avoid a fruit bomb. I like a good rutherford merlot with elk. I recently had a 97 Niebaum Coppola Library Merlot that would have been great.

Had to put this menu off till tomorrow night, but have pulled out a couple of the Merlots from the cellar to get ready.
