Last night my wife made a kelbasa stew that has spinach as a main ingredient. (The recipe calls for kale, but she uses spinach) I didn't know what wine to open with it (not that we had time to enjoy a bottle what with taking the kid to his lessons after dinner) and it go me to thinking. What does one pair with foods that have something with a strong taste like spinach as part of the flavor.

i.e., what would you pair with oysters rockefeller, spinich salads, etc.

I'd drink a full bodied chard with oysters rockefeller due to the richness of the entire dish, not just the spinich.
