| | I asked The Rocket Scientist if she thought I should butterfly them for the grill (we normally broil them on top of the shell), and she thought that the split on the top would be enough for them to spread out. | We grilled them on the shell over medium to med.+ heat on the gas grill with metal kabob skewers to prevent curling. My only advice to anyone trying this technique is to be sure you remove the tails from the heat earlier than what your gut may tell you because, unless immediately removed from the shell, they will continue to cook.
Also, the last time I grilled up the tails I added a little bit of seafood seasoning and it really improved the overall flavor. But nothing improved the flavor quite like the white burgundy that accompanied...mmmm! | | | |

| | Went to "Party for the Senses," a hard-ticketed event at Disney's Food and Wine Festival. The list of what I ate is far too long, but it was all wonderful.
