Lots and Lots of Fresh Salmon - Kings and Reds (chinook and sockeye)

grilled steaks and fillets, blackened red salmon fillets, freshly smoked...

Look for Wild Bristol Bay Salmon.  It was a good year!


The difference between genius and stupidity is that genius has it's limits...
ps - friends don't let friends eat farmed salmon.

Chocolate, ancho chili pepper and cinnamon salami from Salumi (Batali's dad's place in Seattle) with aged white cheddar from Tillamook and a 6 pack of Rogue American Amber. Nice! And that was lunch...

Just carved up 10lbs. of a whole beef tenderloin bought at Costco. So tonight it's fillet mignon with chanterelle mushrooms in a Cognac sauce. Tomorrow it's burgers made from the "chain" of that nice tenderloin. Beef. It's whats for dinner.

Thai beef salad rolls. Cooked some sliced steak with soy sauce, thai basil chili paste, lemongrass marinade, and shrimp paste. Used a mesclun mix. Have a packet of rice flour wrappers that I can't remember when I bought it, but they are still good. Can be paired with a PN.

Shiro's again. FWIW - most people know to sit at the bar and let Shiro drive. Here's the fun part. The bar is set up from right to left, with Shiro working on the left. It's very common for regulars and other people "in the know" to sit on the right side (after waiting), eat very slowly and then get up and move when something on the left side opens up. I didn't feel like waiting for another 20 minutes, so I just sat on the right and gave "Nick" a shot. Wrong answer.

Nick used a blow torch on over 1/3 of our food (going for a char and citrus combo) and while everything was fresh and tasted great, it was nowhere near the same experience. Plus, I had no idea wtf Nick was mumbling in Japanese. Just a head's up, in the event you find yourself in Seattle's best sushi spot...
