As much as I enjoy lightly sauteed spinach, I'm convinced you can never drink any red wine with it no matter what else is on the plate.
There is something about spinach and the tannins in red wine that combines to overwhelm me with a taste of alum in the mouth. This is the second time in two weeks that a good bottle of wine has been rendered unpleasurable (hey, I've got my priorities straight - a great bottle of wine vs. a bag of spinach - I'll get rid of the spinach, thank you very much).
From now on, it's uncooked spinach or spinach and no wine. | | | |

It was from the infamous Bryan Flannery and IIRC it was around $25 a pound. Sounds high, especially if you live in Alaska, but it was worth every penny. It shipped to me the same day it was caught.

| We made a three cheese baked ziti last night (recipe from Whole Foods): 1 lb ziti pasta 1 jar of pasta sauce 1 cup part-skim ricotta cheese ½ cup grated parmesan cheese 2 tbsp chopped basil 1 cup mozzarella cheese Preheat oven to 350  Cook pasta accordingly  Combine half of pasta sauce, ricotta cheese, parmesan, basil, salt, pepper.  Toss pasta with the cheese and sauce mixture.  Spread remaining pasta sauce on bottom of baking dish.ÂPour the pasta mixture into the dish.ÂSprinkle with mozzarella cheese. Bake uncovered until top is golden brown and bubbly for 30 minutes.
