We're hosting a rare midweek wine dinner this evening. The first course will be a sort of eclectic non-Italianate antipasto. Next will be pan-seared magret with green peppercorn sauce with wild rice and asparagus, followed by a cheese course.

FRESH halibut - just caught it yesterday - with a beurre blanc.

The difference between genius and stupidity is that genius has it's limits...
ps - friends don't let friends eat farmed salmon.

I made this for dinner last night. A bit of prep work but it works well with any vegetable that can be roasted. Instead of beef tenderloin I used small flank steaks and cut out much of the cream and butter in the potatoes. Yummy and wine friendly.

We invited my Mom out to the house for the weekend instead of getting together on Mother's day. She requested Soft Shell Crabs for dinner, a wish I was only too happy to comply with.

Lightly floured in seasoned (with Old Bay) flour, then into egg and then Panko bread crumbs. Sauteed in butter and enough olive oil to prevent the butter from burning. A quick squeeze of lemon and a sprinkling of parsley, to finish. Simply delicious! Served with sauteed string beans with garlic and olive oil and rice.
Cooked them for just the amount of time it took to knock back a couple of dozen steamed little Neck clams with garlic butter! (about 3 minutes per side. I also spun them in the pan halfway through, so that they would cook evenly.) One of the true joys of Spring.

Enchilada casserole (first time)

Recipe:
1 pound lean ground beef
1/2 cup chopped onion
1 can (about 10 ounces) red enchilada sauce
1 can (10 1/2 ounce) condensed cream of mushroom soup
1 can (10 1/4 ounce) cream of chicken soup
1 can (4 ounces) chopped green chile peppers
1 cup milk
1 small clove garlic, minced
1 package (about 7 ounces) tortilla chips, coarsely crumbled
8 ounces grated Cheddar cheese or Mexican cheese blend


Preheat oven to 375°
In a large skillet, brown ground beef with onion; remove from heat and drain off excess fat. Add chili sauce, soups, chopped chile peppers, milk, and minced garlic; mix well.
In a greased 9x13x2-inch baking pan, place a layer of half the coarsely crumbled tortilla chips; top with half of the ground beef mixture.

Layer with remaining crumbled tortilla chips, then remaining meat mixture. Sprinkle cheddar cheese over top. Bake at 375° for 35 to 40 minutes. Let stand for 10 minutes before serving.

I wasn't thrilled with the results of the recipe. I googled it and it was the best recipe I saw off of southernfoods.com or something like it. Won't be making this again.

Corned beef and cabbage tonight.

Grilled rib lamb chops last night- rubbed them with evoo, a garlic paste made from minced garlic and sea salt, fresh home-grown sage, and pepper.
