| Mrs. TJ and I tried the braised short ribs recipe out of the Cafe Boulud cookbook over the weekend and ate it the other night.
While not the transcendant experience of the short ribs Mrs. TJ recently had at Palena (she told me she wants to go back and order four courses....short ribs, short ribs, short ribs and dessert!), it was still excellent. The flavor of the sauce, once reduced is outrageous as well.

I believe so, yes! But we were too lazy to make that part of the pairing. D'oh. It was just meat meat and more meat! | | www.roguefood.com -- www.cellartracker.com | |
