Subject: Pairing with Rosemary

I am making a new recipe and wondering about pairing this one with so much rosemary in it.
Currently marinating antelope roast in red wines (leftovers of zin/syrah blended), rosemary and garlic.
Then it will be slow-cooked with carrots, celery, onion, cumin, fresh rosemary and bay leaves.
I most likely will serve with mashed potatoes but
also considering dumplings or serving with biscuits or skillet bread.
SO I need help deciding between one of these wines:
1999 Clos de l'Oratoire des Papes Châteauneuf-du-Pape
1997 Château Larose-Trintaudons
1998 Château Rouget
1999 or 2001 Chateau Ste. Michelle Syrah Reserve
2002 Landmark Syrah Steel Plow
or maybe 2004 Marquis Philips Sarah's Blend
trying to clear the cellar too

My vote would go for the 1999 Clos de l'Oratoire des Papes Châteauneuf-du-Pape or the 2002 Landmark Syrah Steel Plow. Two different ends of the spectrum but they may both work. The more I'm looking at it I'm leaning more towards the 02.

Same two wines jumped out at me, but I'd lean toward the CdP.
