I know buttermilk is a traditional part of the process, but does anyone know why?

I marinate the chicken in a mustard-based liquid (with no buttermilk) and have always been satisfied with the results - Am I missing something by not including buttermilk?

Buttermilk is mildly acidic so it tenderizes the meat.

Now I know where the idea for the next DAWGS off-line came from. Wine with fried chicken? Everyone knows fried chicken is best with an RC Cola.

I tried DJHombre's suggestion of salt, pepper, cayenne pepper, and paprika in the flour of my fried chicken. I used vegetable oil. It turned out well just needed a larger amount of the spices.

weird. i can't think of any other food besides fried chicken that is such a complete waste of calories. and i grew up in the south.

Fried chicken update:

I tried a small batch of this a few days ago. Seasonings were paprika, cayenne, salt, pepper, and I added a ton of garlic powder. BAM! It made a big difference and it was good. Vegetable oil as always.
