Homeade fried chicken drumstick (actually turned out good, just needed more spices-I used salt, pepper, paprika, and cayenne pepper in the flour)

last night: Roast Antelope wtih Carrot/Rosemary Sauce
ended up with the Châteauneuf-du-Pape, which was a nice match

tonight: Potato and Caramelized Onion Frittata with Gorgonzola
'97 Sebastiani Barbera (oops, lost in the cellar, but still very good!)

The difference between genius and stupidity is that genius has it's limits...
ps - friends don't let friends eat farmed salmon.

I made these last night for dessert

Dark Chocolate Souffles with Cardamom Creme Anglaise

The souffles came out great. I was not thrilled with the sauce as it had a very strong flavor that messed with the good dark chocolate (I used Valrona). The sauce would be better on fruit.

Shaferguy, curious about what, if anything, you do to the lamb burgers. I am starting to eat more lamb and had been thinking about trying a burger. Any suggestions as to the seasonings that would work best? TIA

I cooked the lamb burgers just about like I cook a hamburger. I seasoned with onion powder, pepper and Dale's Seasoning sauce.

Just FYI about lamb burgers...if you don't want the burger to be so gamey, mix with ground beef.
