| | I don't have the Dr. Loosen. I have the Christoffel. My favorite Auslese pairings are fruit and fruit desserts, Thai, Chinese, Mexican, smoked meats, pork with fruit sauces, pasta, seafood, or fowl with cream sauces, fowl with friut sauces, etc. | | | |

| I like Ausleses with spicy foods especially. I had a Loosen Auslese that went extremely well with sauteed Calamari in a sweet and spicy pepper sauce. It was really outstanding.
The last time I went to eat at August, my girlfriend and I were drinking an Auslese and found that it paired extremely well with her appetizer of rich creamy crabmeat and truffle gnnochi, which I thought was somewhat interesting ( I thought the butter and truffles would be too much for it ), but I'll be darned if it wasn't simply amazing together. My girlfriend doesn't normally care about pairings, she just hopes that I will get a wine that she likes. I had foie gras and some fried oysters with creamy horseradish, bacon, and parmesan, and I wanted to get a Riesling, so we ordered a 2002 Selbach-Oster Zeltinger Sonnenuhr Auslese and it went great with her gnnochi and also with her tarragon & pork belly crawfish agnolotti, as well. Thats one reason I love Riesling so much, they're chameleons and the flavors can morph so that they go great with many different foods.
