I found a local store in Sparks called Buthcer Boy that carries a nice variety of game meats in their freezer including buffalo, wild boar, quab, venison and my favorite, elk. They also make 40 varieties of sausage and I enjoyed the pork Basque sausage.

Based on my previous elk experiences which were very good I bought a NY strip steak for my NYE dinner. Simply prepared with olive oil, Lea and Perrins Worcesteshire, black pepper and a small amount of minced garlic which was scraped off before cooking, then quickly searing over lump charcoal untill just done rare, and then a sprinkle of Maldon seasalt and lastly topped off with a merlot reduction.

Eating this tender steak reminded me of a comment a chef once made to me about elk stating that he could not believe the amount of flavor while the fat content is so low.

Does anybody have any favorite elk preparations that they wish to share?

Your version sounds pretty good! Elk has a great flavor and, I think, is most enjoyable with simple recipes and presentations.

Depends on the cut of meat. Elk swiss steak is very good. Also good with mushroom sauce.
Thawing elk burger right now. Not sure if it'll end up meat loaf or meat balls.
