Agreed. It's the complete package that counts. Here in Columbus, we suffer with Cincinatti style chili: ground meat and other bits, brown water, and CINNAMON. Oh, did you know it's frequently poured over top of spaghetti? I'm never going to understand these Midwesterners that surround me.

But who says one can't put tomatoe sauce in the mix?
Chili is whatever one wants it to be. First the meat can be any beef or fowl (even vegitarian) one wants; buffalo, duck, pork, hamburger, venison...
The" liquid" can also be anything one wants also; tomatillo for a wonderful verde sauce, tomatoes, onions, garlic, peppers, chilis... in theory even beans.
The reason so many people believe there "should" be beans in chili is because the mass food market makes it that way. I'm sure that most people would be upset if they got a bowl of chili and it didn't have beans in it. It isn't wrong but it sure doesn't need beans to be chili. | | | |

My last trip to Fort Worth a few months back I was told the exact same thing.
I'd never heard of Shiner Bock.
