I knew nothing of cheese when I bought The Cheese Plate by Max McCalman. It is extremely well-written and organized. For example, it contains great "cheat sheets" on which cheeses go best with particular varietals. Buy it used on Amazon.

Are you looking for cookbooks or coffee table books?

The Cheese Course by Janet Fletcher (cookbook w/ some great info as well)

Cheese: Selecting, Tasting, and Serving the World's Finest by Alix Baboin-Jaubert (great info, more coffee-table-book in style)

And I 2nd The Cheese Plate.
