I'm having a couple WS forumites to my house for dinner tonight, so I made chocolate souffle for dessert. I picked up some really good Callebaut 70% chocolate. I'll fill the ramekins halfway, drop a cube of chocolate in, and then top up, for extra chocolatey goodness.

First time I'm making souffle, so hopefully it turns out well.

I remember when GolfZinNut hosted mattach, Ddb, PourQue and I for dinner in March. There was this decadent choco-bomb cake... GZN disappeared for a moment and returned with some Martinelli G&L Zin (200?) and it was surprisingly great as a pair. Eat some cake, drink some wine.

Brought back from Germany:

Hachez Cocoa d'Arriba 77%
King's Gold Ecuador Edel Bitter 66%

The Hachez is quite bitter but has a very smooth texture.
The King's Gold is sweeter but has a burnt undertone.

Feodora Grand'Or 75%

Not as glossy as others and distinctly mild but it is supposed to be. Nice fruity flavour.

Cote d'Or Sensations Brut 86%

Surprisingly mild for an 86%er, smooth but slightly boring.

You guys are such a bad influence.

I'd never had Scharffen Berger chocolate, but saw the 70% variety at my local World Market the other day. I balked at paying $6.99 for a bar, so settled for some Lindt Excellence.

Went back in yesterday, and they had marked the SB down to $3.99. That, I'll pay! Wonderful chocolate.

Just attended a half hour seminar by John Scharfenberger at our local market yesterday. Very entertaining and informative. Interesting history, surprising health benefits and tasty too. I'll try to put together a summary and post it.

$6.99 is a CRIME, but i'm glad it(sb) was marked down to the right price finally for you.

i haven't found any lindt that i like yet...

a friend gave me some russian chocolate today, but i have no idea what percentage or even the name of it. as close as i can tell, the company is named "baoxhobehne". anyone know anything about this? i'll give it a try after dinner tonight.

while my interpretation of the spelling was quite off, i did findthis , but it still leaves little detail. it's it, exactly, but i do not know if it is even dark or milk chocolate or at what percentage. looks ordinary, so far?

It's the Russian word for "inspiration", the name of the chocolate. Most Russian letters look like Latin letters, but many have quite different sounds. Phonetically, that word is somehing like vdakh-nuh-VEN-i-eh. I believe it's produced by Red October candy company. Should be pretty good if it's been stored well.

it's got nuts in it. i don't like nuts(filberts(?)....hazelnuts(?)) getting in the way of good chocolate. which leads me to believe the faint taste i get of chocolate is probably milk chocolate. maybe i shoud give this to a female?

I love dark chocolate too. Recently, I saw an article that paired wine up with chocolate (madera and I think valrhona). If you are interested to know more about chocolate and its process, see if you can find this magazine called Cocoaroma. Some interesting stuff, especially if you are into chocolate...
