| Always a little pearler on a hot night, this sparkling wine matures fantastically. Personally, I don't like to drink it too cold as the flavours are muted but open up as the wines temperature starts to climb. At the moment the 1996 is starting to lighten up around the rim a bit, the nose is full of jammy cherry and a hint of plum which follows through on the palate with some nice fresh acidity, fruit tanins and good length.
