We opened this bottle for our 1st anniversary this past weekend - we ordered take-out sushi from our favorite sushi place (salmon, yellowtail, toro, spider rolls... the works!).

Billecart-Salmon 1995 Rose Cuvee Elizabeth

Pale pink color with coppering rims - I have to admit of all the wines in the world, I enjoy "looking" at the color of a rose champagne the most. Aromas of a ripe apple orchard in the fall along with biscuit and ginger. A textbook wine that opens up with food - the wine, the flavors of the fish, the soy sauce and ginger all danced around my palate to a point where I could not figure out where the food ended and the champagne began. This bottle was still a baby, as it had vigorous acidity along with its fruit. A wonderful match with the sashimi and sushi (especially the toro and the hamachi), and a perfect bottle of wine to celebrate our first year of marriage. Give it a few more years and it will be even more spectacular.

Billecart-Salmon Roses are probably some of the prettiest roses around. Hard to find but good. Thanks for the TN on this one.
