| One of the champagnes in our "palate cleanser" session before the Freeman Caves Dinner.
- 1996 Bollinger Champagne R.D. Extra Brut - France, Champagne (2/9/2008)
Light gold in color; This champagne had complexity from the nose through the finish - brioche, spices and ginger on the nose with similar flavors along with marzipan and toast. Structurally a "big" wine with medium acidity and minerality present on the finish. Wonderful. This was tasted under challenging conditions but was really spectacular champagne in the Bollinger style. $$$ (94 pts.)

| | Pale straw, fine bead, moderate nose of toffee, yeast, sour green apples, hay and light honeyed notes. Medium body, high complexity, high acidity, long length. Lean and crisp with crunchy, focused green apple, minerals and toast. 94pts. | | | |
