A solera styled Champagne with wines dating back to 1983. - Moderate nose of strawberry, smoke, spice, earth and pears.  Full body, high complexity and acidity with long length and fine texture.  The palate matches with further developing layers and flavors. 94pts.

Billiot produces 3,750 cases of wine annually from vines planted to 75% Pinot Noir and 25% Chardonnay, with holding in the largest Grand Cru, Ambonnay, located in the Montagne de Reims.  With old vines, low yields, no filtration, no-oak usage and low dosage he is crafting some very fine wines.  Definitely buy his Rose if you see it. The Montagne de Reims is a horseshoe shaped area with a variety of expositions, made up of soils of Cretaceous chalk with mixtures of clay and sand.  The village is planted to 56% Pinot noir, 28% Chardonnay and 16% Meunier.
