2001 William Fevre Chablis Champs Royaux -- I think this is Fevre's entry-level Chablis; I assume that Champs Royaux is a proprietary name and that this is a blend from different properties. In any event, it has a reticent nose, but lots of swirling brings out some apple and mineral scents; very clean flavors of apple, lemon, flint; and a crisp, medium-length finish. This won't rock anyone's world, but it's a good introduction to Chablis for anyone wanting to see what all the fuss is about at a reasonable price (about C$25). App. 86-7 pts. Might show a bit better with a couple of years in the cellar, but this definitely isn't one for the long haul.

Served with endive leaves topped with cream cheese, fresh dill, and smoked Sockeye salmon. Nice match.
