One of the different Chablis that Verget makes in any given year. I found this in the depths of my cellar and thought it was ready to go with some seafood. In fact I was concerned it might be over.

It was a deep gold in color. It had lemon, vanilla and slate notes on the nose with a good mineral spine. There was definitely oak but in the background. The WS review noted "heavy oak treatment" which was not present. A balanced wine with a very fresh, crisp finish.

This is perhaps an example of a wine that gained in complexity with bottle time. Our earlier bottle from a year ago was good but not to this level.
