It is Wednesday night and I was in the mood for some good food and wine today. I went to the local gourmet market in search of a nice cut of game meat, and I was in luck. I bought two nice elk chops and pan seared them rare, deglazed the pan with VSOP Cognac and homemade beefstock, and then topped off the reduction with some chopped dried cherries.

The CdM was a perfect match. It is my last bottle and the best to date. The nose has some notes of roasted black fruits typical of the vintage, and is nicely into secondary development. A hint of charcoal lurks in the background.

The flavors are similar and have a nice earthiness to compliment the roasted fruit. Tannins are fully resolved and I see no reason to age this wine any further for my taste. A good wine on its own, even better with the elk.Â

The 1989 and 1990 CdM are both very good wines. I am holding off on opening their big brother LLC for a few more years in both of these vintages
