| How was the acidity and how ready to drink is this wine? We had the 1999 Guadelupe last night and it was acidic and needed more time in the bottle. I have 3 of the Canary Hill. | | | |

| Enough acidity to keep the flavours bright and pumping, but certainly not enough to detract from the wine. I had a sip when the bottle was first opened, and about an hour or a bit less in the decanter certainly helped it to open up more, but the bottle we had was drinking well. This wine might still improve a bit, but it shouldn't disappoint today. | | | |
