My cellar is becoming less cab-centric.  I blame Burgundy.

 

Cabernet/Cab Blend - 35.2% 

Pinot Noir - 20.4% (40% - CA / 60% - Burgundy)

Syrah/Rhone Blend - 14.2%

Chardonnay - 10.5% (60% - CA / 40% - French)

Port Blend - 3%

the only changes I would like to see are the Red Bdx blend and the Cab percentages decline over time.

With other varietals increasing evenly? If not, which do you want to grow? Or is there a varietal that you don't have at all that you want to substitue in?

I think that the Nebbiolo, Sangiovese and the champagne blend will continue to grow at the expense of the Red Bdx blend and cab. With the type of foods that I cook Cab and Bdx blends just don't go well so they just sit in the cellar. And for those times we want Cab/Red Bdx those wines will be there. I'm certainly buying very few these days.

13% Syrah (70% CA, 30% Australia)
2% Italy (mostly from Sicily)
1% Merlot
1% Zinfandel
1% Petite Sirah
1% white wines

I have stopped buying Syrah, Zinfandel, Merlot, and Petite. I have cut back on Cabernet purchases to one producer. I will be increasing the Nebbiolo-based wines.
I don't suffer from insanity. I enjoy every minute of it.
