Popped the cork and left it in the bottle for an hour and a half before drinking. First taste was not very good. I could not decide if the bottle was off or if I just did not like the flavors. I kept drinking with dinner and is was barely acceptable. I was about done with my dinner (salmon) and just about ready to give on this pinot, not haviing taken a drink for a while and my wife, says try it now, it's better. So at about 2 hours after opening with the right combination of air and temp, it finally opened up some dark black berry and licorce flavors which were pretty good. We saved about half the bottle for the next night and it was about the same with the dark blackberry and licorce flavors. Besides the fruit flavors, there was not anything else going on with this wine. |
