Pale gold color. Minerally pear, cream, apple, lemon and petrol/smoke aromatics. On the palate the wine is off-dry, and plays off the hoisin/cherry sauce perfectly. Not too sweet for the food, and the food is not too sweet for the wine. Endlessly long finish of lemon cream and stones with some smoky petrol accents. There's plenty of acidity to keep things lively. I think this wine is at the perfect point right now, but it will likely hold for another few years. The rest of mine are going down soon. Delicious and well into the outstanding range if you're scoring. Let's say 94 points, but 2 extra for being a great food match (with hoisin braised pork loin), so 96.

I've just put to bed a half case each of 1990 Benedict Loosen Urz Wurz Spatlese and Auslese. Are you suggesting it's already time to wake them?

I've got a chicken brining for dinner tomorrow (Monday). This would include flavors of juniper berry, bay leaf, andherbs de provence , with a hint of sweetness, and the obvious salinity (which comes across to me as minerality). Side dishes are yet to be decided but probably include herbed potatoes.

I find my tastes run closely to yours, so what would you do for pairing/placement (before/with/after) on this one? The other wine will probably be a 2002 Oregon Pinot.

Wow that's a tough white wine match. I might suggest an off-dry Scheurebe, like the 2004 Lingenfelder Scheurebe Kabinett Halbtrocken.

With all those herbal flavors I don't generally like to go with a contrasting wine. Complementary usually seems better. Ooh...ooh (IDEA!) got any older Maximin Grunhaus laying around? The resinous forest floor nuances of old Grunhaus would work well.

Thanks for the note. I have one bottle of 1990 S-O ZS Spatlese in the ready rack.

The 1990 Spatlesen and Auslesen from top producers should have many more years of life ahead.

Tonight I am going with 1992 Von Schubert Herrenberg Auslese and halibut staeks.

This '90 Selbach Auslese has several years of life left, but I can't see aging it any more. It's just amazing now.

I keep looking in my cellar for wines that are "ready to drink" and passing over my '90s, but it appears that they are in prime form right now. Now what I am going to do after they are all gone I don't know. I've got a gap until the '96, '98 and '01s are ready. Actually I'm not sure the '96s will ever be ready.
