| As might have been predicted, I left my notes at Corkage's
The food was uniformly excellent. The first course was a real winner. Corkage has a way with corn, and this was no different. The jalapeno corn bread and the bacon made for a perfect contrast. Not to be outdone, the last (pre-dessert) course was equally memorable. The roasted boar was excellent, but the mixed beans with tasso ham and the chanterelle-foie gras wonton really set it apart. Corkage has a real talent for not only mixing flavor elements in his dishes, but also combining textures of food in creative and successful ways.
The wines were uniformly excellent (okay, my mystery wine and the corked toscana wine being exceptions). If I had my notes, I'd say more. As it is, I will probably post some TN's for the champagnes and suffice to say that the Pax syrah showed abundant fruit and a nice peppery character that was very satisfying to me and mrs. raybanz.
Many kudos and thanks to Corkage for another great dinner!

They aren't the clearest or best (operator error?!), but here they are. Link should take you to Kodak Gallery and you should not be required to log in or anything to view them. | | | www.roguefood.com -- www.cellartracker.com

| You seem to have some sort of fetish with counter clockwise pictures of food. How about some people pictures next time? | | | Joe-----Wine is like potato chips around me...if it's open, it's gone. | |

| Weird. I couldn't put two links into the same post, all I got was a long string showing the URL with the search parameters.
Here was the original thread
WTF? Why won't this go in as an active URL? | | | Cheers, y'all

I have people pictures (old fashioned 35mm came back), but no food pictures since we used a disposable 35mm camera (we have since bought a new digital...that's how I fixed the lost battery charger problem with our first digital camera) and the close-ups were out of focus.
Anyways, I'll ask the wife to post them later.
Since there are no captions for TJs pictures,
#1 is Roasted corn chowder, blue corn/jalapeno corn bread, bacon and garlic chive oil
#2 is Miso-broiled sockeye salmon, balck sesame steamed rice, tomato-ginger cream sauce in the glass cup
#3 Smoked duck tamale in bannana leaf, mixed red chili sauce, cilantro creme fraiche
#4 White/red bean w/tasso ham, pan seared wild boar tenderloin, foie gras & chanterelle wonton (not yet in picture)
#5 wild boar w/ wonton
#6 Pound cake french toast, grand marnier berry sauce and mini-malted milkshake
#7 Pound cake again
#8 Some dead
#9 Wine I spilled (and a testimonial for oxyclean)
Thanks TJ! | | | |
