St Simeon

A four inch wheel of brie packed in a clear plastic "clam shell" type container. The breatheable container allowed this to achieve a waterbed like ripeness without any ammonia. Spoonable and delicious. Went nicely with caviar and 1990 Krug.

In theory, there is no difference between theory and practice. In practice, there is... .ps - friends don't let friends eat farmed salmon.

Lincet de Bourgogne
Riopelle
Pecorino al Tartufo
Brillat-Savarin avec le truffe noir
5-year old Quebecois cheddar
38-month old Parmigiano-Reggiano

Mmmmmmmm. My fridge is overflowing with cheese right now. I think I've got 9 or 10 different types in there at this point.
