| I am, by no means, an advocate of jarred sauces. However, I will say that I have found very few quality made jarred sauces, not to mention other types of pre prepared items, that I could not alter to my liking by throwing them on the stove, adding a few seasonings and fresh ingredients to my taste, and cooking for less than 15 minutes. I think that most people don't even consider something like that. They seem contrained by the fact that it is an already completed item and feel that cannot be altered. If you spruce up most pre prepared foods, you can make them much better, and some can even be really good. You'd be amazed at the things that I can make palatable that you probably never would have enjoyed otherwise.
Its not something I choose to do often, but when I do want a very quick meal, I still want it to taste reasonably good. Try it out sometime.

| Great point. I make a very good White Clam Sauce, the base of which is a small can of store-bought sauce (with the low quality olive oil floating on the surface skimmed off.) Doctored up with clams, clam broth, garlic, wine, spices and a touch of cream, you'd have a hard time discerning that the base is from a can. | i don't like sauces that take hours to reduce, simmer, etc...
i like my sauce fresh.
get some tomatoes... or *GASP!* A can of peeled / seeded, a blender, balsamic, chili flake, basil, oregano and mint, garlic, a bunch of salt, and you're good to go. that is all you need.
puree that, boil your pasta, throw the sauce in a pan to flash cook it for a few minutes, throw the pasta in, toss, plate, garnish.

| don't usually do it but used jarred sauce tonight on my antelope meatballs. couldn't pass up the Classico spicy tomato basil at $.08 per jar today at the grocery. no reason for it - expiration date in 2008...probably an error but totally irresistable. add a little more garlic, some wine, put on the meatballs and simmer. un tal affare | | | In theory, there is no difference between theory and practice. | If I'm not doing from scratch - and I usually don't - doctor'ing up a Rao's is the best. Saute' some garlic in EVO, add some fresh herbs and shrooms, some fresh tomatoes, crushed red pepper and you're good to go. | | | |
