Veritas True Flats Espresso & Dark Chocolate 54% Cocoa:

that’s more like it & very nice/tasty. The combination of dark chocolate with small espresso bean portions is great!

Yep.

Last night: Cote d'Or Sensations Brut 86% Cacao Noir de Noir.

The higher % of cocao I get the less I like these. The presence in the mouth is a bit drying. At the risk of making a pun I'm thinking something in the 70% range is the sweet spot.

No, not really. There are too many other producers that will still put out great quality.

When a mass production firm buys out a small producer I ditch it (see Etude, La Jota, etc...). I apply the same approach here.

My wife worked for 6 years for Craft/Nabisco. As that garbage producing giant bought out small producers, bakeries the product was never the same. Cheap alternatives were introduced (i.e. HFCS, preservatives, sodiums, etc...) & quality was compromised.

Maybe not right away, but eventually. I think we all have about 12-24 months of quality product from them. After that, who knows?
