I will be opening up some 1975 California Cabs for my wife's birthday in a few weeks. Should I decant and/or filter these wines? If I should filter, what is the best technique for it?

I would stand them up now, and carefully decant to remove the sediment just before serving.

the above advice is best. i should add that as a precaution a decanter funnel with steel mesh is nice. i would never use any type of paper filter. if done properly the sediment will be minimal if any at all.

I do NOT recommend that you even think about using a filter. With the age of the wine, a filter could strip away a portion of the remaining fruit. Follow Bud's advice.

I doubt it. For the most part, whites have little or no sediment.

Whites are typically already filtered so they look pleasing. For sweet wines this is pretty much a requirement as if there is any active yeasts or bacteria the fermentation could restart and cause spoilage of the wine.

I'm late coming to this thread but I will stick in my 2 cents.

For God's sake NEVER filter any wine! NEVER!

You gotta sit the bottle up for 24 hours and then decant it with a strong light behind the neck so that you can see when the sediment starts to come out. I also suggest that when you pull an old bottle that might have a lot of sediment one should mark the side of the bottle that it has been resting on. When it is decanted keep that side down. The sediment should drop to the bottom and will not come out over the curve of the neck until the very end. You stop before that.

Funnels... metallic funnels... NO WAY. Wine is like Pizza: it should never be touched by anything metallic! No knives, no forks, no funnels... unless the funnel is GLASS!

A glass funnel is the only funnel I will use, period!

If one has a lot of wines with sediment in them I would suggest the purchase of a nice, strong wine cradle. It can be a sexy presentation (especially if you have a scantily clad member of the opposite sex turn the handle slowly <where did that come from?>).

where do i get a glass pizza cutter???

btw do you have a decanting cradle and if so do you like it? i am thinking of getting one someday and was just wondering if this is one of those wine purchases that really push one over the geek edge.
