Last night, while enjoying a bottle of 2002 Point Concepcion Pinot, I decided that I would compare it to a bottle of 2002 Vincent Girardin Santenay 1er "Les Gravieres," so I opened it up and let it sit.

Well, it turns out that I wasn't that thirsty last night and I never got around to drinking any of the Girardin--so it sat, untouched in the bottle (open) for about an hour. I then closed the wine with the Vacu-Vin and stuck it back in the cabinet.

So my question is: Should I try to drink this wine tonight, with the idea that it is already in "breathing and fading mode?" Or, will this bottle react much like a bottle that has been recorked--meaning that I could even wait a week or so to drink it?

That Premier Cru is very young and probably would be best after 2012, so I'm guessing it'll be fine for quite a while. I couldn't really guess as to the exact time. There are many variables, including the effect that sitting open for hour will have, and how welll the Vacu-vin eliminates oxygen from the bottle.

If I understand correctly that you poured no wine out of the bottle, then very little surface area of the wine was exposed to oxygen and very little ambient air was exchanged with the gases originally impounded inside the bottle. With it resealed, I suspect that you can go for days (or weeks if you're feeling lucky) before you really need to crack back into it.

Stemor, you understand correctly. The wine was not poured--not a drop. Nor was it moved at all after opening. The only part of the wine that was exposed was the quarter-sized surface area at the top of the bottle.

Thanks to you both. Sounds like I can go a few days (at least) without worrying about the wine falling-off.
