1988 Chateau Rabaud-Promis Sauternes (375 ml) -- just beginning to darken, about the color of burnished copper now; beautiful nose of caramel, melon, cotton candy; fairly thick, no gaps on the palate, with plenty of peach, pineapple, creme brulee, and honey flavors that keep pumping on a very long finish. Enough acidity to keep everything fresh still; lots of life ahead. App. 94-5 pts.

I think I paid about C$8 for this when the '88s were being discounted as '89s were arriving. What I wouldn't give to be able to go back today and re-think how many bottles I actually want (I bought only 3). How many times have we all asked ourselves that question?

I bought a bunch of this at auction a while ago on the cheap (well for vintage Sauternes anyway), can't remember exactly, but it was less than $25 a 375. The first two bottles I wasn't terribly impressed by. My bottles are about the color of Budwieser. This latest one shows a very pretty nose of honey, orange marmelade, lilac and a hint of vanilla. Medium plus in the mouth with good acidity to match the sweetness, towards the elegant side. honeyed lemon, with a spritz of orange are the prevailing flavors, but there is a residue of honeysuckle on the long finish, that makes this wine for me. 90 points, drink in the next 30 years or so.

Another bottle drank last night at Bouchon was delicious at first, but gained a little harshness with an hour of air. Drank with terrine of foie gras and a sheep and goat sampler.

1988 Château Rabaud-Promis Sauternes

Tasted at an offline so brief comments only

Opened and served immediately in restaurant stems without decanting. Served with the Seared Fois Gras course, of course! Clear and appealing amber color. Beautiful nose that is dripping of honey, apricots and cloves. Flavors of apricot, spice, and mild citrus notes. Well balanced and a simply beautiful mouthfeel. Excellent wine that is ready to go. My number two wine of the night.
