I'm more of a meat and potatoes kinda cowboy so I dont have a whole mess of experience with fish (Mrs. Mudpuppy loves). So, with Valentine's Day upon us, I was wondering if anyone has any fish dishes they could recommend...

There is a salmon recipe that I make on occasion.

Take two 6oz salmon fillets (skin on) and rub the flesh of each with 1/2tsp cumin. In a non-stick pan heat 1 tsp olive oil over medium heat and when hot put salmon in skin side up for two minutes. Turn and cook skin side down for about 12 minutes more, or until done.

While the salmon is cooking, seed and dice two ripe tomatos, add 1/4 cup of chopped fresh basel and 2 tsp balsamic vinegar, mix well and set aside until the fish is done. Remove the fish, cover with foil to keep warm, and add the tomato mixture to the pan. Heat for about one minute, and serve over the fish.

I serve it with a nice green salad and a couscous made with chicken stock with finely dices zucs, red onions, and red pepper.

A good place to start is:

I highly recommend (if your wife likes salmon) the salmon with soy honey and wasabi sauce and the salmon with miso.

Best think that will make the dish is get the best, freshest fish possible. If salmon, try and get wild instead of farm raised (a well posted topic here).

Thanks for the link. I have a pretty decent source for salmon. So we are set.

Nothing special, just the Lunardi's in the area. Because of the recent flaps they have been doing a better job of marking the wild vs. farm raised. Regardless, they do a pretty good job of freshness, as opposed to Whole Foods, where half the store smells like old fish.

OK, so it's too late now for Valentine's but we had fresh sea-bass on Friday night which was delicious and had mahi mahi steak last night.

This is the first time that I've managed to get mahi mahi in the UK so was wondering what to do with it. Just brushed it with olive oil, put some lime juice on it and fried gently until I reckoned it was cooked - nice with new pots, babycorn and sugar snaps.
