I made this last night along with a spinich salad with curry dressing. Easy to make and very tasty.

1 lb sea scallops, sliced in half lengthwise
1 14.5oz can of diced tomatos
1 8oz can tomato sauce
1 tbs olive oil
2 tbs finely diced shallots (or red onions)
2 tsp finely diced garlic
1 1/2 tbs dried basil
1/4 tsp ground pepper
pinch of hot red pepper flakes
8-10 oz linguine (dried)

saute shallots and garlic in oil over medium heat for 1-2 minutes.
add tomatos, tomato sauce, and spices and simmer for 10 minutes
add scallops and simmer until cooked (about 5 minutes max)
serve over linguine

Makes 4 servings

I served it with a 1998 Argyle PN Willamette Valley that went very well.

Actually, I got these at my local Giant. They have a very good fresh seafood section. They were on sale a couple of weeks ago and I froze them when we ended up not being able to use them the day we bought them.

That sounds fantastic. I have been doing a lot of scallops lately, but usually just grilling them bacon-wrapped with a few different grilling sauces (store-bought).

I will have to try this.
