| JW1 was right, this is an excellent book.
Jones recomended this cookbook in a thread last week. I bought it and it is excellent. The book is half a recipe book, half a text book, and half an instructional manual on kitchen set up (do three halves make a whole?). Anyway, I love the format of this book. Anyone interested in learnig about french cooking, and not just a few recipes should read it.
Last night
Fishermans Salad (shrimp, scallops, and lobster with a wild vinagrette) And Roast Duck with Peaches in a Green Peppercorn Sauce
The sauce recipes are lighter and less masking then some other French Styles.
My ALL-CLAD pans actually cheered when the book arived.

| Thanks for the tip, Jones and TCK. I'll get this one. I prefer a lighter sauce, so this is good news.
You know who else I really like - their book, that is - is Ina Garten, the Barefoot Contessa. She's fantastic!

| I would also suggest any of Mario Batali's cookbooks Simple Italian Food, Holiday Food and The Babbo Cookbook. I have done a lot of the recipes from the Babbo book and enjoyed all of them. Another cookbook I like a lot is the Terra (St. Helena) restaurant book, great food and very informative. | | | |

| Terra is a great cookbook for reasonably accessible higher end dining. | | | |

| IIRC, Jones said this was a book from the 80's. | | | www.roguefood.com -- www.cellartracker.com | |

| It was originally published in 1981 back when Wolfgang was just a chef not an empire. | | | |

| I bought 2 of them (to get the free shipping) and I'm impressed with the information and the instructional format. No pictures, just good information. In fact, when I saw another Puck book at Sur Le Table on sale (Live, Love and Eat) I bought that well. Actually, I love cookbooks. My wife keeps asking when I'm going to actually use one. | | | |

| I used this cookbook just yesterday to make chicken baked in salt crust. A straight forward recipe to execute with good results. | | | |
