here is the end result:
MikeW brought
muskrats to our kitchen along with preasure cooker.
We used an old recipe suggested by
Daniel Rogovand confirmed by MikeW' mother and Dorchester County Cookbook which belonged to MikeW's GRANDMOTHER!
I felt like I went back to the days of my youth when my mother cooked the rabbit. I expected less and got more.
Very pleasant surpriseLess adventurous in food were not forgotten and got the
lamb chops, scottadito style.
The pairing wines:
1964 Renato Ratti BaroloHigh neck ulage - something unusual for the 42 years old wine. The bottom of the cork was disintegrating, but the wine was A OK, brick orange peel color, plenty of refreshing acidity and no unusual smells.
Vibrant fruit, leather, porcini mushroom and was quite delightful wine.
2 more bottles left.
2000 Chaeau Pavie DecesseAfter having 2001 Pavie, I was mentally prepared for the worst and was pleasantly surprised.
Not a big hairy monster at all. I haven't found
Eric's"wow" and "Holy Toledo", despite the fact that
this wine good pairing with muskrats.
I'd probably buy it again @ $110 but not a penny more.
