So I have a new found love for artichokes. I am having company over this weekend and the company adores Italian food. I would like to make a simple artichoke pasta (preferably served hot). I thought about lightly breading and frying sliced artichokes, tossing with fettucini, EVOO, parmesean cheese. What kind of meat goes best with artichokes in a pasta dish?

Suggestions?

i wouldn't bread or fry the artichokes. and chicken goes great with artichokes, if you consider it meat!

Yes, chicken goes well with artichoke. I also like veal.

I would just sear some sliced artichoke hearts in some butter and garlic, toss in some white wine for the last two minutes, then toss with some fettucine, EVOO, sun dried tomatoes, chopped basil, a pinch of oregano, lemon juice, salt and a little black pepper.

Then saute a couple of veal medallions in with some Olive Oil, black pepper, garlic, red pepper flake, and lemon juice.

Makes for a nice meal........toss in a Viognier and you're good to go.

So I finally tried my artichokes and pasta dish...

I tossed fettucini with EVOO, chopped sun dried tomatoes, sliced artichokes, parmesean cheese and topped with grilled chicken. OMG...delightfully delicious.
