I see no problem with Hollandaise. The wine should depend on the substrate. If it's fish, go with a Chardonnay or SB. I serve reds with steak with Bearnaise Sauce. Bearnaise is just Hollandaise with tarragon. The vinegar and or lemon added is minimal and not a dominant flavor in the resultant sauce.

The Count Alexander de lur Salaces told me his favorite pairing with Chateau d'Yquem was a white fish with "Doootch" sauce. It took me ten minutes to figure out he was saying "Dutch" sauce (aka Hollandaise).

So... Chateau d'Yquem.

You know, if I was running d'Yquem I'd have it with eggs in the morning, salad at lunch and big hunks of dead animals at dinner!
