| I see no problem with Hollandaise. The wine should depend on the substrate. If it's fish, go with a Chardonnay or SB. I serve reds with steak with Bearnaise Sauce. Bearnaise is just Hollandaise with tarragon. The vinegar and or lemon added is minimal and not a dominant flavor in the resultant sauce. | | | |

| The Count Alexander de lur Salaces told me his favorite pairing with Chateau d'Yquem was a white fish with "Doootch" sauce. It took me ten minutes to figure out he was saying "Dutch" sauce (aka Hollandaise).
